This Moorak Cabernet Franc is a one-off release, bottled in claret with a hand-stamped label. Only a single puncheon made in 2023, it’s bright and varietal—an early pick but still avoiding any green edge. Since bottling in May 2024, it has matured nicely, revealing vibrant aromatics, a dry, structured palate, and a beautifully vivid colour.

Sourced from the Deanery vineyard, based in Balhannah- Adelaide Hills.
AROMA/FLAVOUR:
Cranberry, bramble, and delicate sweet oak toast.
STYLE:
Light to medium-bodied with bright acidity, dry tannins and a savoury edge. A fresh, early-picked expression of Cabernet Franc shows the vibrancy shadowed with depth.
WHEN/WHERE TO DRINK:
When it's cold outside and you're toasty inside.
WHAT TO EAT WITH:
Earthy, herbaceous and with richer foods.
WINEMAKER NOTES:
Low yields from this block in 2024 resulted in just 45 dozen produced. The fruit was 100% de-stemmed to highlight its varietal character, then pressed to stainless steel post-ferment. After 12 hours of settling, the wine was racked into a single seasoned puncheon, where it rested on fine lees for 10 months. Extended élevage added layers of complexity and maturity.
