Grown on the sandy soils of Blewitt Springs in McLaren Vale, this Chenin Blanc sparkling displays a surprising aromatic intensity. Lifted citrus and orchard fruit notes are complemented by the variety’s signature pithy, savoury characters, delivering a wine of clarity, texture and poise.

VINEYARD:
Powerful 28 year old Chenin Blanc grown on the sandy soils of Blewitt Springs grown by Lulu Lunn (organic, not certified) 

AROMA/FLAVOUR:
Generous aromatics of quince, apple and pear. Bright and expressive, with a vinous character and texture derived from full malolactic fermentation and time on full solids

STYLE:
An aperitif style of sparkling, generous in its character and extremely approachable.

WHEN/WHERE TO DRINK:
Take it home and pop the cork as soon as you get through the door.

WHAT TO EAT WITH:
Sashimi, Kangaroo Island Marron

WINEMAKER NOTES:
Chenin Blanc from this site retains its natural acidity well, allowing the fruit to be picked at slightly greater ripeness and giving the variety more opportunity to express itself. The result is a more vinous base wine. This character was further emphasised by fermenting with a higher level of solids and allowing the wine to rest on full solids for around 10 months prior to tirage.
