This dry white Chenin Blanc was picked around ten days after the sparkling parcel, allowing a little more time on the vine to build flavour and intensity while retaining the natural freshness that makes Chenin Blanc such a distinctive variety.
Wild fermented entirely in barrel, matured for 14 months on full lees with regular stirring during fermentation, and allowed to complete full malolactic fermentation, the wine leans toward texture and generosity rather than a razor-sharp style. The variety's natural acidity still carries through the palate, bringing balance and freshness without taking away from the weight of the wine.
