A multi-vintage blend designed to define a progressive Moorak house style of Blanc de Blancs. The wine is composed of 20% 2023, 40% 2024 and 40% 2025, with each vintage receiving individual cellar treatment. This approach delivers a complete and nuanced expression, bringing together texture, precision, delicacy and finesse.

VINEYARD:
Multiple vineyards throughout the Adelaide Hills, primarily based in Oakbank and Carey Gully.

AROMA/FLAVOUR:
Straw, oak and a little citrus. 

STYLE:
Generous, layered and dry.

WHEN/WHERE TO DRINK:
At a time you want to celebrate and remember.

WHAT TO EAT WITH:
Starters, entrées, fried chicken.

WINEMAKER NOTES:
I wanted this wine to be a more progressive expression, rather than focusing purely on acidity and autolysis. The aim is to create a balance of texture, savouriness and lift through different approaches to elevage- full solids in seasoned oak (2024) alongside parcels matured in stainless steel (2023, 2025). This sparkling base will now evolve as a perpetual blend, with each new vintage blended in to build both consistency and individuality over time.
