2018 Gumeracha ~ Adelaide Hills 'Skin Contact' Viognier
After separating approximately 60% of the juice by light pressing into tank, the grapes were moved back into the fermenter to sit on the skins of the grapes for 5-6 days. Without punching down the ferment, a hard layer formed due to the top skins oxidising naturally sealing the ferment. This gently extracts the phenolics and aromatics of the grapes, creating intense aromas and a crunchy palate.
Single site/vineyard, wild yeast fermented, light filtration before bottling without any finings or additions
